Assistant F&B Cost Controller

About this opportunity

· Supports the F&B Cost Controller for calculating costs of food and beverage items, to the change in pricing of the menus or change the prices of certain items based on the information they ‎ collect, recommends solutions if food or beverage shortages occur. · Monitors conjointly with the F&B Controller the cost controller policies, management plans contracts, recommendation plans. · Supports the F&B Controller in establishing menu change process and ingredient/recipes adding process. Undertakes physical inventory randomly each month · Highlights cost saving opportunities. Runs monthly Cost Control audits and reports · Draws the opening inventory and menu items before any new store opening along with the Line Manager and Finance. · Performs Stock Variance Analysis, recipes transfer between locations · Undertakes stock movement/ trend analysis and monitoring of fast-moving consumer goods · Reports changes in the purchase prices affecting Cost of Sales · Responsible for POS/ Micros updates to ensure the accurate listing of current food/ beverage/ retail items
